Wake Up, US Families!

If abysmal, dismaying and frustrating don’t come to mind with these stats, then I don’t know what will (do tell me how you respond as these are my reactions to this data).

David Katz, MD, Yale University School of Medicine

Dr. David Katz, pictured here has stated, “Our children will suffer more chronic disease and premature death from eating poorly than from exposure to alcohol, tobacco and drugs combined.”

According to data analyzed by the Centers for Disease Control (CDC), the average teen eats fruits and vegetables 1.2 times/day.

Only 1/3 eat veggies less than once per day and 25% eat fruit less than once per day.

This information came from survey of 10,000 high school students, which shows a wide range of ethnicities, and this is what was pulled for various backgrounds:

-black teens eat even fewer veggies
-Hispanic teens eat veggies 1.1 times/day
-white teens eat veggies 1.4 times/day

All of these groups eat so few vegetables that their differences are negligible. Read More→

Today, the Cleveland Plain Dealer ran an article recapping the U.S. Department of Agriculture’s updated guidelines, which it modifies every five years. The move to a heavier plant-based diet is huge news considering the Food Pyramid, which has yet to be revised, has been heavy in grains and dairy for many years.  Essentially, the USDA is recommending 59% of total daily calories from vegetables and 42% from fruit, 15% from whole grains and 40% from fiber, which will happen easily if people adopt this way of eating.

Critics would argue that the dairy is too high, at 52% and that there is little indication of where meat falls.  The guidelines are not the Food Pyramid, but may help to shape it when that change is final.  If anything, these updates are heading in the right direction.

Low-Carb Eggplant Parmasean

I just picked up a bunch of organic bounty from a newly formed co-op group in Cleveland.  One thing I love about co-ops is that it forces the buyer to be creative.  There’s nothing like a little culinary creativity.  Check out this low-carb eggplant recipe that I am enjoying thoroughly as I write.

And don’t be fooled by the plate, it’s a small sized dish that fits everything just right, protein-rich eggs and veggies galore.

Low-Carb Eggplant Parmasean

This and my Juice Plus+ and I'm ready to rule the world!

1/2-1T Nutiva Coconut Oil

1 Free-range organic egg

1/2 cup egg whites

1/4 cup cooked, diced roasted eggplant

3 T marinara sauce (no-sugar)

Sprinkle of Parmasean

Handful of organic spinach (never buy lettuce conventional, it sucks up pesticides!)

Heat oil in pan in medium heat and spread around when melted.  Add egg and egg whites and break the yolk with a spatula.  Cover with a lid to promote even cooking.  When the bottom is fully cooked and the top is still a bit runny add the eggplant and marinara sauce.  Cook with lid on until the eggs are solid and cooked through (I did choose to turn mine over, but if you’re not good with turning, then keep it the way it is).

Turn off heat. Put spinach or other deep green organic lettuce of choice on your plate and put eggs on top.

Nitty-Gritty Holiday Fat-Loss Tips

Here’s how I do it, so I don’t skip a beat on my fitness and even get an edge on fat loss!

1.  Eat every 2.5 – 3 hours.  This alone is an excellent way to stimulate the metabolism and boost calorie burn!

2.  Drink more than half my body weight in ounces daily. I chug at least 10 ounces first thing in the morning and ALWAYS have water wherever I am.  In fact, I make it a goal to chug 120 ounces daily!

3. Eat protein with every feeding.  Protein requires extra calories to break down in the body.  Many nutritionists call it a natural thermogenic, which means it heats up your body and burns those calories.

4.  Exercise 4-6x weekly.  3-4 of those workouts are total-body intervals that I perform for 20 minutes with a dynamic warm-up before and stretching after.  The other 1-2 workouts are cardiovascular workouts that typically are over in 15-20 minutes done interval style.  I do love a longer run and will throw that in when the kids are visiting their father.

5. This tip is worth gold: I time my nutrients so that I eat my fruits and starchy grains immediately after a workout and eat proteins and fats the other times.

6. I eat veggies all day long, even at breakfast!

7.  I take my Juice Plus. I don’t want to miss out on any of the rainbow of colors and all their powerful phytonutrients, especially if I limit the calories and sugars from starches and fruits at times.  Even with all the produce I eat, it’s still not enough to bridge the gap and make me feel as though I’m protecting myself from disease.

Now, with 18 peer-reviewed, third-party studies, I have total confidence that taking Juice Plus is why my children and I bypass the colds and flu viruses that run so rampant this time of year.  I’m too busy to get sick!
