The Anti-Sitting Workout

I just finished a 40-minute intense interval workout that I can already feel in it my rear end!  You see, with Christmas break and my need to sit and study, plan, work at my desk, sit and gab with family for the holidays and lay around to get over a virus, which is pretty much gone, I’ve been doing, well, a lot of sitting.

I'm tired of acting like a fat cat. Gotta get up and move!

I’m really tired of sitting.  Know what I mean?  I have to move a lot, which makes me somewhat “ADD” when I have to sit at my desk for more than 1.5 hours.

Low-Carb Eggplant Parmasean

I just picked up a bunch of organic bounty from a newly formed co-op group in Cleveland.  One thing I love about co-ops is that it forces the buyer to be creative.  There’s nothing like a little culinary creativity.  Check out this low-carb eggplant recipe that I am enjoying thoroughly as I write.

And don’t be fooled by the plate, it’s a small sized dish that fits everything just right, protein-rich eggs and veggies galore.

Low-Carb Eggplant Parmasean

This and my Juice Plus+ and I'm ready to rule the world!

1/2-1T Nutiva Coconut Oil

1 Free-range organic egg

1/2 cup egg whites

1/4 cup cooked, diced roasted eggplant

3 T marinara sauce (no-sugar)

Sprinkle of Parmasean

Handful of organic spinach (never buy lettuce conventional, it sucks up pesticides!)

Heat oil in pan in medium heat and spread around when melted.  Add egg and egg whites and break the yolk with a spatula.  Cover with a lid to promote even cooking.  When the bottom is fully cooked and the top is still a bit runny add the eggplant and marinara sauce.  Cook with lid on until the eggs are solid and cooked through (I did choose to turn mine over, but if you’re not good with turning, then keep it the way it is).

Turn off heat. Put spinach or other deep green organic lettuce of choice on your plate and put eggs on top.

Enjoy!!

Thanksgiving Day Fat-Shred

Get some hot tips here to stimulate your metabolism, lose belly fat and get fired up to wrap your day of celebration around your workout.

For best results, make your workout short burst intervals in 20 minutes or less unless, of course, you don’t really want to melt body fat and get strong (then stick with the 35+ minutes on the cardio machine).

Hungry for Fun!

The house is a mess, life is stressful, and the kids are full of energy, so this is what we do:

I am grateful that we only hunger for a good time, but there are many children who actually eat so few calories a day because they live in poverty. That is why through the end of the year, I am on a mission to serve 3,200 meals to Cleveland’s poor through the Cleveland Food Bank. At least 1,060 meals will go to children. You can help provide 200 meals and sweat off your excess! :)
