Jamie Oliver-Inspired Stir Fry Recipe
ByIf you’ve not watched Jamie Oliver’s Food Revolution, then you’re missing the talk of fitness-conscious parents and non-parents alike. Jamie is one inspiring guy as he tries to change school lunch programs, and he’s inspired me to make a super quick and easy stir fry for my family. I used to make stir-fries more often, but since I moved, I can’t find my wok. But being the creature of invention, I did this all in a large skillet…and it came out beautiful and tasty. Here are the ingredients and the final product.
Family Fitness Guru Savory Chicken Stir-Fry
Serves 5
1.5 cups brown basmati rice
3 cups of water
1-2 T olive oil
1 pound chicken breast cubed
2 cups sweet peas in a pod
1.5 red peppers sliced thin
1/4 c Annie Chun’s Pad Thai sauce (there are no fake ingredients in here!)
1/2 t of sea salt
Small handful of cashews
First thing is to get the 3 cups of water in a saucepan and the rice cooking. Keep the lid on the whole time you cook the rice. It will take about 20-25 minutes. (When the rice is cooked, let it sit for five minutes before removing the lid. Then you may stir in the sea salt.)
While the rice is cooking, warm up your skillet or wok on medium-high heat. Add the olive oil and spread around pan/wok. Then add the chicken and stir around until all sides are coated with oil (a higher heat helps to seal in the juices).
Once the chicken looks thoroughly cooked (6-7 minutes), you can turn down the heat, add the veggies and sauce. Turn off the heat and remove the pan.
Place about 1/2 cup of rice onto a plate and then a couple heaping spoonfuls of stir-fry on top. Garnish with a few cashews and you’re on your way to your own food revolution.
